Grilled Onion Relish
3 medium onions (about 1-1/2 pounds)
1/2 cup chopped parsley
1 teaspoon minced garlic
1/4 cup tomato juice
1/8 teaspoon red chili flakes
Skin and trim onions. Thickly slice and grill over medium-hot coals until tender. Remove onion slices from grill with spatula. Chop grilled onion on cutting board then mix with other ingredients. Serve with grilled burgers. Makes 6 servings.
